This week, I'm sharing one of my favorite salmon recipes. It's a go-to for me because I get to have a restaurant-style meal in under 30 minutes! For this recipe, I'm using some of my favorite low-carb ingredients- pork panko and ghee.
The crust is super flavorful, thanks to the pork panko, lemon zest and dried thyme leaves. It pairs well with the salmon and provides a nice crunchy experience. This is a great recipe for our kitchen challenged savorers looking to grow their skills.
Ingredients
2 salmon fillets
2 tbsp ghee, melted
1/4 tsp sea salt
1/4 tsp black pepper
3/4 cup pork panko
1/4 cup grated Parmesan cheese
2 tbsp thinly sliced green onions
2 tsp lemon peel SAVE $
1/4 tsp dried thyme leaves
Instructions
Heat oven to 375°F. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towel. Place salmon, skin side down, in pan; brush with 1 tablespoon of the ghee. Sprinkle with black pepper and sea salt.
Mix pork, cheese, onions, lemon peel and thyme in small bowl. Stir in remaining 1 tablespoon ghee. Press bread crumb mixture evenly on salmon.
Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately.
